Gourmet Harvest International Recipe Of The Month – St. Patrick Day Pot O’ Gold Cups
This is a delicious and magical treat that we know you will love. It will add excitement to your dessert offerings for your St. Patrick’s Day festivities. After all, who doesn’t enjoy a sweet Pot O Gold. We found this recipe from our friends over at Delish.com. The recipe is by Lauren Miyashiro. Lauren is the Food Director for Delish.com. She graduated culinary school in 2016 so we are impressed she has already become a Food Director for such a fantastic culinary site.
Cooking spray, for pan
1. Preheat oven to 350° and grease a 12-cup muffin tin with cooking spray. Prepare brownie mix according to package instructions.
2. Add batter to muffin tin and bake 25 to 30 minutes. Once brownies are out of the oven, press a shot glass into the middle of each, making a shallow cup. Let cool completely.
3. Cut rainbow candy belts into 2″-long strips.
4. Dollop a scoop of Cool Whip into each brownie cup, then sprinkle with gold sanding sugar. Place a rainbow candy belt on top, forming the candy belt into a semicircle, like a rainbow.
We know you will love these Pot O’ Gold Brownie Cups. You choose if you want to use packaged brownie mix or your own favorite recipe. No matter which you do, the outcome will be delicious and everyone will enjoy your creativity. Use your imagination and change it up some or better yet make several batches slightly different. We suggest you get some gold foil covered chocolate coins and spread them around the serving tray along with the gold sanding sugar for a really magical appearance.
