Barbara Bush’s Famous Chocolate Chip Cookie Recipe
Recently we lost, known as our “Grandmother”, former First Lady Mrs. Barbara Bush. Her chocolate chip cookie recipe was recently shared by the Houstonian Hotel. With her recent passing, the Houstonian not only shared her recipe, they baked them and as a courtesy and in memoriam to Mrs. Bush gave them away to the public.
We decided to bake our own. The recipe is very quick and easy to make. It makes several dozen rich and tasty, “hardy”, cookies. They are absolutely delicious. For a little variety, we added pecans to the last dozen before baking.Try them. My family enjoyed them and will be baking them again. Thank you Mrs. Bush for the recipe and for the amazing life example you set for all of us.
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) unsalted butter, softened
1 cup granulated sugar
1 cup firmly packed light brown sugar
2 teaspoons vanilla extract
2 cups quick-cooking oats (not instant)
1 (12 ounces) bag semisweet chocolate chips, preferably Valrhona
1. Heat oven to 350 degrees F. Sift together flour, baking soda, and salt onto waxed paper. Set aside.
2. Beat together butter, granulated sugar, brown sugar, eggs, and vanilla in a large bowl until fluffy. Stir in flour mixture until well blended. Stir in oats and chocolate chips.
3. Drop batter by rounded tablespoonfuls, 2 inches apart, onto ungreased cookie sheets.
Bake at 350 degrees for 10 minutes or until lightly browned. Transfer cookies to wire rack to cool.
